Simple Chicken Soup for the Culinary Challenged

This is the most basic recipe that you will find. Once you have mastered it you can add your own choices and spice it up to your liking.

You will need

Approximately 1 pound of cooked chicken – white breast is nice, without the skin

8 cups of water

10 Oxo Chicken Bouillon Sachets (make sure it’s the 25% less salt type)

2 cups of thin egg noodles or any other pasta that you may like

How it’s Done

Put water into a large pot, and add skinned chicken, chicken bouillon. Boil until chicken is fully cooked.

Remove chicken from the pot and cut up into small pieces and put back in the pot.

Add the noodles and cook until tender.

The above is my very basic recipe that you can start off with.

Now you can think of other ways to soup it up such as:

-At the beginning add a finely chopped onion, carrot, celery (I don’t like celery in soup), -Experiment with different types of broth until you find your own favourite,
-And of course some spice-pepper for a start and anything else you might like such as parsley.
-Keep away from the salt until you try the soup as the broth can be quite salty.

Tip: If you like a bit more substance and less watery soup, add some instant mashed potatoes at the end of the cooking time. Try ½ cup at a time and stir it in well. Adding the potatoes is good for people who are ill need more nourishment.
